I saw on Youtube several videos and recipes for infused booze and cocktails using sous vide. I thought I might try this using my crock pot. I have tons of cryovac pouches and a sealer. I figured I couldn't screw too much up and would make it when I am around the house so I can keep an eye on the temperature. Is this doable or dangerous? I love to infuse vodka and it makes great gifts, but sometimes I forget and don't have the week or so it takes to wait. I was thinking of starting with a basic chili infused vodka as I have a friend who has been requesting it.
