Posting late...but I have a 3 or 4 bone rib roast that was frozen. I put it into my sous vide setup at 132 and I have 7 hours before company arrives. I am wondering if it will be done. I plan on blasting it in a 500 degree oven for 10-15 at the end for some browning.
To give an idea of size, I think it is about 5 or 6lb and probably is 8in x 5in x 7in.
