Using a sous vide device without a bag?

Has anyone ever tried to cook something directly in the water bath maintained by a sous vide device? What Im picturing is a brisket that I usual simmer until tender. Can I put it directly into the water in the pot using the sous vide device to keep the temperature constant? I have the Anova Precision cooker so I would need to keep the food away from the entrance of the water into the heating element.
