My starter is 13 days old. I’ve been following the Northwest Sourdough videos for making a starter, 50/50 white whole wheat. I only feed once a day like the videos instruct but my starter is maybe doubling around ~8 hours or so. Her videos have all 3 of her starts doubling by at least 4 hours by now. The temp in my house is always around 70. I’ve stopped watching the videos because my starter doesn’t seem as far along. I’m still doing once a day feeding and I aim around 1:2:2. I’m just not sure if it’s on the right track or not and if I should just be more patient.
