This is a really specific need. I live in Santa Fe, New Mexico and love to bake bread. After years of experimenting, I've determined that the best results are yielded by adding extra gluten and granular lecithin to the dough. I have no problem with gluten, but I just finished treatment for breast cancer. As my tumor was estrogen receptive, I need to avoid soy products. The lecithin helps keep the bread moist and make it freeze better. Can anyone recommend a source for granular lecithin that is not soy based?
