In the past, I've made a killer cherry cobbler using Trader Joe's jarred sour cherries. But this year I've got myself a big pile of fresh sour cherries. So here's my question: My recipe says to use the reserved juice from the jarred cherries -- but I think that the packing juice includes sugar. I can save the juice that runs off when I'm pitting the fresh cherries, of course, but that won't be the same as the sugary juice that the jarred cherries are packed in -- right? And that means my recipe will no longer work..?
More to the point, does anyone have a good recipe for a cobbler (or, better yet, a crisp) using fresh sour cherries?
