Soups using Beef Broth/Stock

So, I've got some beef stock that I'd like to make a soup with during this blizzard. BUT. I don't have enough onions to make french onion...

I was thinking I could do a vegetable (have onions, carrots, peas and corn frozen) with some rice or grains, but as I don't have tomatoes, might need to just add some pasta sauce to it but will that be weird with the peas/corn?

Does anyone have any good go-to pantry recipes that use beef stock instead of chicken stock? I'm running dry on ideas....
