I am a dietitian trying to modify recipes for a diet for people with IBS- there are certain carbs they are not likely to tolerate found in garlic and onion and mushrooms. Any recommendations for faking stock so these patients can make soup without having to make homemade stock beforehand?
Also, they can use garlic oil & onion oil as the carbs don't leech into oil, only water. Also, the green parts of green onions & leeks are ok. I know...not the most clear cut diet...
