I'm doing some volunteer work for a soup kitchen and I'm hoping some of you out there have some recipes scaled to serve 160 (80 people, 2 servings per...) I don't have a detailed list as of yet of what foodstuffs are available, but it appears to be a mix of food service stuff (powdered mashed potatoes, canned green beans), mixes (brownies), and fresh (turkeys, etc.). I've looked on-line, but many of the food service recipes use only institutional stuff, or assume access to professional kitchen equipment (we're in a decently equipped church kitchen). I'm looking, say, for meatloaf? Something for canned yams? Can I bake retail-size box mix cake in a half-sheet pan? Etc.--any tips, recipes (to my email address), resources, books, etc. appreciated.
