Just returned from a few days away and realise I have a fair bit of veg in the fridge that needs eating up pronto or will be wasted. I want to do soup because I'm craving it and it's also good for freezing leftovers (there's only two of us at home at the moment). And I lazily don't want to go the shops for 'extra' ingredients because it's pouring with rain ;-)
The veg I have that need eating up are a pound of courgettes, 4 leeks, a pound of fresh tomatoes (a little past their best but OK for a soup I think) and three red peppers (capiscums). I also have staples like three or four carrots, a few celery stalks and lots of potatoes to add if necessary. Plus garlic, chillies, chicken stock and a ton of dried spices.
Would ideally love a recipe where I can use ALL the the courgettes, leeks, red peppers and tomatoes in one pot if anyone can think of one! But if general opinion is that those won't go together well, I'd make two, eg one courgette, red pepper and tomato, one leek and potato. Any suggestions?
