A different sort of snapper

I have a pair of Irish terriers. These dogs are 25 pounds and, like all terriers, fierce defenders against intruders. Okay, you may all laugh now, but, really, they have big-dog barks. And I've learned to recognize their various barks so a few minutes ago, when I heard their reptile/amphibian bark I decided to go out to make sure they weren't tangling with a copperhead.

Well, no. It was a dang snapping turtle, headed toward my little pond. So now I have a smallish snapper in an empty drywall bucket on my porch. I definitely do not want him in my pond where he'll eat all the fish and lots of the frogs. I am tempted to take him down to the creek and turn him loose, but just in case I decide to fix him for dinner, what's the best way to dispatch him and how do I prepare him? The only time I've had snapping turtle in the past, as snapper soup, I found the flavor to be good but the texture to be like a dried eraser. Is this typical?
