I would like to make the recipe in the November Bon Appetit for Cranberry-Citrus sorbet.
It calls for using leftover cranberry sauce and adding ingredients. The recipe calls for adding orange and lemon juice, sugar, water and lemon and orange peels, and gets cooked.
Now - my leftover cranberry sauce was cooked from fresh berries, and is not smooth. The recipe doesn't say anything about pureeing it, but I'm not used to making sorbet - should I be pureeing it first?
