OK, I will start by saying I am new to pork. I was raised kosher, and just started eating it about 6 months ago, so I'm in unknown territory.
The first time I tried it, it was a pulled pork without BBQ sauce.
It was a bit smokey, nice crunchy bits here and there and a good rich flavour.
I've been trying to recreate that, but everything I am finding ends up tasting like it was in a slow cooker all day, and calls for, or needs, a lot of BBQ sauce.
I have a shoulder, and am thinking of searing in my cast iron pan, then roasting uncovered in the oven, low and slow. Sound right?
Before I ruin another piece, I want to make sure!
