Solo Dining Recommendations for Non-Driver Visiting Anaheim (Near Disneyland) Jan 4th-6th

A very dear friend and her large extended family are going to be staying at the Desert Palms and the Portofino on January 3rd through the 7th.

I am traveling by public transportation (Amtrak and ?) from San Diego to visit them and I do not know where I will stay overnight yet.

We will probably get together over breakfast and/or dinner at their choice, but I have no interest in visiting the current Disneyland, which is no longer the place I knew, loved and grew up with in the 60's.

Lunches will be of my own devising.

Is Napa Rose good after the holiday rush? Can I visit Thai Nakorn easily using public transportation?
Is there good, authentic Japanese (sushi is mostly of interest) cuisine nearby? Also the same question applies to Thai and Vietnamese. Or is there a good soul food joint in the area?

I know that a lot of places close in January for vacation, so I would really appreciate local insider advice. Any and all recommendations, including all cuisines from high pricey to low divey, cheerfully welcomed.
