today I bought some scallops at an insane $27 a pound from what I consider a reputable source. They looked good, tannish-cream color, so I got them despite the price. Tonight when I roasted them using a recipe I've used many times before, they would not brown in a 500 degree oven or under the broiler, they shrank noticeably, and the sheet pan was a giant puddle, all signs of wet scallops. I called the store, and they swore they sell only dry. Is there any way these could actually be(badly behaved) dry packed scallops or have I been hoodwinked? Thanks.
