I bought my first soft shell crab today at the market. Very tasty!!! How do you cook these? Last year I kept trying a lemon caper sauce which I don't really care for. Looking for something different. Here is my method of preparing them:
Soft Shell Crabs
Rinse the crab in a bowl of water. Remove antena and eyes with a pair of siccsors cutting across and behind the eyes. Rinse again.
Remove breathing gills, they are like fans, on each side of the top or shell side of the crab.
Turn the crab over to the belly side and then cut the tail off...this will resemble a v cut. Rinse again and then pat dry with a paper towel.
