Help, Chowhound! I'm hopelessly addicted to the soba salads from Soba Nippon in Midtown. The dressing is the key element, and I am having a hard time deconstructing it. Someone once posted about this a few years back, but I actually don't know whether the commenter who posted detailed instructions for soba tsuyu had ever had the particular dressing from Soba Nippon.

The only thing I know is that the Soba Nippon dressing is sort of a ponzu-based vinaigrette. I further suspect that there may be a touch of spicy mayo in it - it is opaque, and its orangey hue suggests some chili oil.
