Trying a new white bean soup recipe, and my dinner guests rescheduled for Saturday night instead of tomorrow night (Friday). I've already put the beans in water to soak overnight. Can I still use them? Should I take them out of the water tomorrow...and then what? Should I let them soak for 48 hours? Will they get tough? Or soggy? Should I just go out and get another .99 cent bag of beans? But, I hate to waste food. What to do?
