Smothered Steak

verily | May 18, 2009 12:23 PM

I caught a glimpse of Paula Deen making a smothered steak a while back (which she wrongly called a chicken fried steak) and it got me hungry for one. If you've never had it, it's cubed steak dredged in flour and pan-fried that is then cooked in a brown gravy made from its drippings. I think they also call it country fried steak in some parts. My great-grandmother used to serve up a mean version but the recipe died with her. :(

I've never seen such a beast in Austin, but my experience with Southern home cooking restaurants has been limited to Hoover's, Threadgill's, and Black-eyed Pea. Do any of you know where I could find smothered steak here?
