Smoking pork butt for work - oven finish

So the guys at work want pork sliders during the Super Bowl and they know I have a smoker. So, my question / situation is I work for the fire department and we work 48 hour shifts, this week Saturday and Sunday. My thought is to use the "smoke" setting on my Traeger grill for 3-4 hours on friday then transfer the pork butt to an aluminum cooking tray, refrigerate and on sunday add a bit of apple juice and oven bake @ 225 for 4-5 hours. I'm assuming if I can have it wrapped air tight with liquid it should slow cook until pullable? or am i way off here....
