Smoked turkey gravy

Sorry, i seem to be kind of dominating with my questions- but my husband and i will be making smoked turkey, and since the smoker doesn't provide much in the way of pan drippings, I was thinking about using the wings (after smoking) to make gravy, like maybe roasting them to render any more fat and then using that??

Problem is, I really don't know what I am doing. Will the wings be enough? I'm gonna need about 5X more gravy than a normal family since I have 20 nieces/nephews, plus all the parents, etc. It doesn't have to be spectacular, just be a large enough quantity I can keep warm in a 2-qt crock-pot. I also have plenty of gelatinous homemade chicken stock.

Also, in your opinion, would a slightly smoky gravy be too much with the smoked turkey?

Oi, lots of questions, I know. I've never made gravy in my life. If anyone has any advice, please help!
