Smoked salmon salad sandwich with bacon on rosemary bread

That says it all ... hot-smoked salmon (not lox) mixed with mayo like tuna salad. Top with a slice if crispy bacon.

Every now and then I get a craving for mayo and all I had in the house was a sealed packet of smoked salmon, so I tried that. The first try was without the bacon but it was still delicious.

Then I searched the web to see if anyone else tried it ... and I found this recipe ... which oddly is the exact brand of smoked salmon I had ... which added the bacon ... which just upped the deliciousness.

Smoked Salmon BLT Sandwich Recipe

I made the salmon salad sandwich mixed with dill on pumpernickle since I thought dill and rosemary bread would be too much. I'm thinking of using herbed mayo in the future and the only other reference I saw was a caterer which made a salmon salad sandwich with ginger mayo which sounds like it might work.

Looking around on the Salmon BLT sandwich site I found this excellent-sounding recipe for spring smoked salmon soup with asparagus and mushrooms. I plan to try that next.
