Smoked pork shoulder, not on a bun -- ideas?

I've got some folks coming over Friday night, and I have a pork shoulder in the freezer ready for action. I plan to do low and slow smoking, and serve with a North Carolina style vinegar sauce. The only thing is I'm not wild about serving it on a hamburger bun with cole slaw. Any other interesting ideas out there?
