Why are the smelliest cheeses the nicest?

I'm eating some Mont D'or right now. It smells so foul, horribly foul. And yet tastes sublime. It tastes like it smells, too: it's not as if it's a different thing on the tastebuds. So what gives? Is there any explanation?
