This whole post is a bit of a humblebrag, I admit... we're a CSA household, and we get a free range organic healthy farm raised chicken from a farmer that I've met every two weeks. For the most part, they are raising what you find in grocery stores most of the time, i.e. 4-5 pound roasters. They're delicious. We have one that we got recently, though, that's only 2.5 pounds. I suspect I want to treat it differently and not end up with an overcooked chicken. This would be great for old fashioned recipes, I'm sure, and if anyone has one to share, I'm all ears. I just think with a small, probably younger, and more "heirloomy" chicken, I probably want to do something special. What do you think?
