Someone posted recently about slow baking beans, lo temp in the oven. I just have to say ,thank you!
Last night I made a big ( le crueset with a heavy lid ) pot of heirloom colorado beans. I just rinsed the dry beans, then added a sliced onion, some chile,cumin and oregano. Generously covered them in water and baked them at 250 from 11:00 pm to 7:00 am. The house was infused with a lovely cumin scent!!!
The beans turned out completely tender and whole. Just perfect, no broken skins or smooshed beans.
I think I will experiment with some other recipes, I think I have my Grandmothers baked beans recipe somewhere....
