I am looking for a high quality slicer in the 9 inch or thereabouts size with a granton edge. I have been ogling the Shuns, and have never owned one before. Most of my knives are Henkels Twin Star and Wusthoff.
Is the Damascus edge really all is it cracked up to be? Is it worth an extra $100 or so (plus you get a nicer handle)?
Other recommendations are especially welcome.
Oh, and I will be using it to slice ham, salmon, corned beef, and flank steak most of the time.
