Sliced bean curd at the Mandarette

I have always loved the sliced bean curd appetizer served at the Mandarette Cafe on Beverly Boulevard near the Beverly Center but I have never been able to come close to duplicating this dish at home. It is made with tofu shaped like spaghetti, mixed with shredded julienned carrots and celery and then dressed with hot oil and soy sauce. I can't figure out how to either buy or prepare tofu in the shape of spaghetti that is not the mushy stuff you can buy at any supermarket. Any ideas?
