Skillet for induction - best balance between even and responsive?

babyraccoon | Jun 20, 202001:35 AM     23

I'm considering a new 28cm stainless steel skillet. I have induction and lots of Fissler Original Profi, Demeyere, and one Lagostina Lagofusion. The Fissler is certainly the most even-heating and cooks beautifully, but I'd like something a little more responsive to heat changes. For any of you induction users, do you have a 'Goldilocks' skillet that gives you a good balance between even heating and responsive? I realise one is given up for the other, so maybe I'm chasing something that doesn't exist, but I'd be grateful for feedback/comparisons between the brands mentioned above, and others like Cristel, Lacor Luxe etc. Thank you in advance!
