Once upon a time, I used a skillet for pretty much anything that didn't go in a pot.
But over the past decade or so I've accumulated a greater variety of cookware, and my skillets are mostly untouched. The last time I can remember using one was on a camping trip where I only brought one pan.
I find that if I want to grill/"fry" something, I do it on a 28cm carbon steel crepe pan. That goes for anything from a grilled cheese sandwich to an overmedium egg. I just find it's easier to flip stuff without high sides.
And if I want to make something with liquid, I usually want the safety of some sidewall, like a saute pan or rondeau.
Given the popularity of skillets, I must be missing something here in relegating mine mostly to storage. When does a skillet really shine?
