Last second plans and I will be hosting dinner Saturday. I'm used to family style but my bf family is accustomed to course meal so that is what I'm attempting
I cooked skate wing with capers a few weeks ago and it was delicious. My problem is that I only have one pan and I think I can get away with cooking two large wings. So I was thinking of dusting in flour, searing both sides then finishing in the oven. Then few minutes before I serve I'll finish them in the oven and make the sauce.
The last time I made the skate either it was very thick or my burner was too hot, so I finished it in the oven to get the middle parts finished.
How early can I do this? At what temperature? I'd like to do it maybe half hour in advance and let it sit/finish in oven.
I understand that I can broil the wings in the oven completely but I don't have time to try it and the oven isn't that strong and I feel I really want the nice pan fried taste.
