Does size matter? What size shrimp for shrimp burgers?

2 out of 3 recipes I've collected as I plan to make shrimp burgers for the first time this week call for extra large or large raw shrimp. But they then proceed to process some into a paste in a food processor and chop the rest. I'll be buying already peeled and deveined shrimp (made the mistake once of thinking I'd save money by doing the work myself). So why should I look for the largest ones?
