I love to eat (obviously, I'm here) and I enjoy cooking, too. But unfortunately as a single guy with a demanding job, I find little time to cook during the week. My cooking usually consists of marathon sessions on Sunday mornings when heathens like myself should probably be in church.
At night, despite the fact that I'm not eating a heavy meal, I enjoy what I call simple pleasures. Here's one my favorites:
I like to take about a third of a pound of very freshly ground sirloin and make a mini entree of it. I rechop the meat with a good kitchen knife, lightly salt it, pepper it and toss in some finely chopped shallots. Then, I insert a nugget of delicious Maytag blue cheese in the center, wrapping the meat around the cheese so that it's enclosed in my burger.
I then sear the burger on a thin bed of kosher salt in a non-stick pan until its well browned on the outside medium rare in the middle. The little nugget of Maytag melts creating this great little beef and cheese sauce that you can dip each bite into after you break the patty open at the table. If you like, the pan drippings make for a nice thin gravy with just a little water added.
It's a quick dinner for all you Atkins freaks. No bun needed. And its awfully good, too.
