Signing Bonuses and Incentives for new restaurant hires

A highly profitable restaurant group in the Harvard Square area of Cambridge MA ($$$$) is currently spamming job sites, desperate for workers with so many locations and the ongoing pandemic labor shifts.

I am purposefully using "shifts" as opposed to "shortage."

This same group is offering a $1000 signing bonus to front of house staff (so all the tipped people) after 90 days. Finally, one might think, an actual incentive! A thousand bucks is real money!!

Which it is!

But as a restaurant lifer, let me add context.

Before earning any tip money a server or bartender will train 7 times here at minimum wage -- locally $13/hr. These shifts will likely be spread over 2 weeks but add up to maybe 35-40 hours all in? so that new person waits at least a week, possibly 2, for a paycheck of a couple hundred bucks. They then will be given the worst shifts and small/terrible stations because they are new, so they will still be making a fraction of the veterans. how does someone who's been covid-pandemic-unemployed manage to re-enter the workforce yet labor virtually free for months???? That $1000 absolutely does not equal the lost wages for all those weeks until they are up to speed.

To rent a studio apartment within 50 miles of any of these restaurants you need to earn in excess of $50/hr or roughly $75k annually. Servers at the french laundry earn that kind of cabbage -- nobody at a mid-tier gastropub in harvard yard comes even close.

For anyone who wants to blunder in and yell these people can just find some other job? They ARE!!! That's the major reason restaurants can't find people -- neither boh nor front makes a living wage in most areas of the united states. meanwhile, i have worked for men who own mega-yachts and nba teams.
