Sides that cut through fat/ richness

I'm planning on doing a slow roasted pork shoulder (a la Kenji from Serious Eats) for Christmas dinner. I plan on serving some acidic sauces to cut through the richness, but I'm not sure what exactly to serve along side it. Roasted veggies and mashed potatoes seem kind of boring and not too complementary. Any ideas?
