What side should I use? Or should I scrap my whole idea and start over?

My boyfriend and I both love to cook, and we're both pretty good at it, at least that's what we've been told. We also like to playfully compete with each other over cooking. See, we live about 40 minutes away from each other and only get to see each other about once a week. And we take turns, him coming my way, me going his & we take turns cooking for each other as well. It's my turn next week and I can't think of what to make for an entree! I have the perfect side, southwestern chili stuffed baked potato. He will love it! But that is just a potato, what do I make for an entree? I'm not afraid of taking risk, and I'm not afraid of something being time consuming or difficult. The only things I can't work around are:
1. No baby animals ie: veal, lamb.
2. No pork.
3. Preferably not chicken or pasta because, being poor, I always make those. I will use them if i have to but I would prefer to do something different for once.
4. And cheap. My boyfriend makes really good money so he's able to buy amazing ingredients so automatically his food is better, I get paid okay but nothing compared to him. Plus I have three pets and he has a roommate to help with bills. Like I said, I'm not afraid of something being difficult or time consuming. And I'm not afraid of making something from scratch it just has to be cheap.
5. He HATES beans. All beans. So nothing with beans. Or something I could easily sub out beans with.
6. And just like the chicken and pasta rule, I would prefer not to use corn. Every Southwestern dish out there uses corn and it drives me crazy! I love corn but really dislike it with south western. Again i will use it if I have to but I would prefer not to.
7. No desserts. Unless you want me to accidentally poison my boyfriend, I may be able to cook but desserts and baking are the bane of my existence. Haha!
Oh! Special note: don't be afraid to suggest heat! We both love hot spices, the hotter the better! And neither one of us have allergies. And I apologize for the length of this post Im told all the time I'm long winded I don't know how to be concise I'm sorry thank you so much.

And if this is too much Im willing to change my Southwestern idea altogether I just thought that stuff baked potato sounded amazing.
I know this seems like a bit much, but we have been dating a year and a half and have been doing this for about as long. After a while trying to out do each other becomes a challenge. Lol thank you so much for all of your help.
