Recently, my wife and I ate at Sichuan Gourmet, a local Chinese restaurant here in the Squirrel Hill neighborhood of Pittsburgh. I' wouldn't say I'm partial to one culture's cuisine above others--and I enjoy cooking and eating them all. However, this most recent outing really set a hook in me. We over-ordered to marvelous effect--three meals worth of food for each of us laid out amid Coke refills and orange dyed napkins. Good stuff. In snooping around I found among scant others several books written by a chef and author named Fuschia Dunlop--the most appealing of which is now out-of-print, and quite expensive. Can anyone point me in the direction of an accessible resource on Sichuan cooking. A book, a blog, a tv series (or episode) available on You Tube? Anything instructive on the subject of preparing Sichuan style food would be welcome.
