Ever since learning on CH that Wegmans was selling Island Creeks and that they also were selling them in SHUCKED form, I have wanted to try them. Today, I finally had them- 2 dozen on a bed of ice, filling a disposable aluminum pan w/ cover, for $40. Fresh they were, so in my book, a great deal, regardless.
(I don't know why Wegman's offers shucked while WF and other markets will not, but I bet different lawyers or insurers read the same laws differently.)
Details: One of the things I have learned since reading the book Shucked, a really fascinating and entertaining read about all the aspects of raising oysters at the Island Creek Oyster Co. in Duxbury, is that they sell their shallow-cup 'grade B equivalents'- at a much cheaper rate than their standard , deeper cup 'Grade A equivalents.' Wegmans' are the shallow cup; so you get a lot less meat than when you pay ~$3 @ for deep cup ICs in a restaurant. However, like all Island Creeks, their profile is that they are clean and creamy flavored and not mineraly or super briny. The Wegmans' shucking job was very good to excellent.
When you buy them, the important thing to aim for -is quick transit time and as short a refrigerated spell as possible, for the simple reason that you don't want the ice to melt and submerge the oysters, resulting in the oysters losing their "liquor"(juices.) But just fyi, mine were still above water after an unforseen delay caused a ~4 hour refrigerated wait until I could savor them. If party etc. timing caused an even longer delay, I would suggest transferring them to a fresh bed of crushed ice.(Ice cold is my oyster preference.)
For convenience and quality I would definitely recommend and order Wegmans' shucked ICs again. But I must say that they really increased my appreciation for the meatier deep cup ICs which give a much bigger and longer lasting experience of Sumptuous and Unctuous than these! I am guessing that anywhere you get $1 oyster specials that are IC, they are the shallow cup ones, but if anyone ever finds $1 oyster specials that are the regular deep cup ICs, pleeeeease tell me!!
