Shrimp Stock

I picked up 5 pounds of head-on shrimp today, and made shrimp stock from the heads, shells, onion, celery, etc.

I am going to use the stock in a shrimp/oyster jambalaya, but will still have 2+ quarts left over.

Does anyone have something wonderful to do with Shrimp Stock?
