Shoyu Ramen Lunch Set at Ramen Halu, San Jose

On one of the few relatively cool days in July, I stopped at Ramen Halu for a quick lunch, ordering the set with shoyu ramen, rice, and okara salad, plus the extra seasoned egg.

The presentation was more haphazard than it's been in the past. There was a slice of psychedelic fish cake lurking under the seaweed, and the spinach was not lined up precisely as it used to be. The photo below, with the chipped bowl and all, is ramen reality.

I liked the broth a bit more than the first time I tried it, yet it's still rather bland. Unlike the other two stocks made by Halu, this one didn't enhance the plain white rice much. This was my first taste of the new alkali-treated noodles. The thin version matched with the shoyu stock were darker in color and had a slicker texture. They didn't seem to soak up the flavors as much, or perhaps the flavors weren't there for the soaking.

The egg at Halu is still my favorite of the various ramen-yas. The egg itself has much richer flavor and sumptuous texture cooked just shy of hard with a soft, jelly-like center to the yolk. The seasoning is complex without being oversalted or relying on sugar for its taste.

This was the least of the many bowls of ramen I've had at Halu. The shoyu stock is the weakest link here, surpassed by Santa and several others in this style. However, Halu still stays on top of my ranking based on the performance of the Halu and shio stocks.
