Shortbread problem

steffer85 | Sep 11, 201811:32 AM     12

I spread my shortbread dough out on a pan, and cut it as soon as it gets out of the oven. Sometimes, the bottom part of the shortbread looks more wet and dense than the top part. Can this be due to too soft butter? I use the correct ratios. Maybe because I leave it in the tray till cooled down? Over or under mixing? I can't figure out the problem...

While baking, some times it looks like the top half is rising, and then lowers again. Especially then, i get this problem.

But this doesn't always happen. But i can't figure out what i am doing differently.
