I am thinking of entertaining 20 or so people for a dinner party and I want to cook something that will be complimented by southern Rhone and Bordeaux wines. It occurred to me that short ribs might be a good option as they could be cooked in advance and kept warm. Alternately, I was thinking of either steak (likely hard to manage that many) or a shell roast. I'd love (1) short rib recipes, particularly how to prepare it in advance and what to accompany them with and (2) other ideas featuring beef that would be a good (if extravagant) dinner idea. TIA.
