Attended a special event at SHO Shaun Hergatt recently and was served a dish containing two meaty, saline Kumamotos in a cucumber gelee. After the first mouthful, I realized I was eating perhaps the best oyster preparation I had ever tasted.
It turns out this dish is on his current seasonal menu and is described as Kumamoto Oysters with
Oyster Leaf, Junsai, Young Ginger, Summer Granité.
Very highly recommended.
