Shepherd's Pie in Esky for 7 hours?

Hi everyone, am new here but have nowhere to go, that explains why I'm here in the first place. I have a situation. Have never done long road trips to the outback before, this weekend's gonna be my first. We would leave Friday morning 6-ish, drive for 7 hours and check into an accommodation where there might be a freezer, but am not sure how big it is. DH and I have been assigned to make dinner on Sunday night for a group of 9. I'm assuming with all the hikes and activities, we just wouldn't have the energy to prepare dinner from scratch on Sunday, so I'm thinking of making 2 dishes of shepherd's pie to bring with me. My question is, is it okay if I prepare them on Thursday eve, let them cool, put them in the refrigerator (not freezer) and the next morning put them in a 26L Esky with as much ice possible and when we arrive at our place (after 7 hours) just chuck them into the refrigerator until it's time to bake them Sunday eve? Or should we put them in the freezer at our accomodation until it's time to bake? I was thinking of freezing them before getting on the road but I'm very much concerned about them thawing a little in the Esky. I know that even partially thawed food cannot be re-frozen. Any suggestions/answers will be hugely appreciated.
