Shelf life for tarts?

I'm always cooking just for two and both of us can never finish a full sized tart or cake.

I do really want to make tarts or pies with in-season rhubarbs, and vegetables and fruits of the like (mostly with a custard filling but not definitely)...how do I store them properly and for how long before they go wild?
