I went down to LA this weekend, and was treated to any restaraunt i wanted. I chose Empress Pavilion (well regarded for Hong Kong style cuisine), and ordered a shark-fin soup with shredded Chicken. I tried so hard to taste what was so special about it, but produced nothing but a head ache in thinking too hard. If the "sharkfin" is the translucent threads of gelatin that thicken the soup, i would say it has about as much flavor as cornstarch. My assumption is that i simply do not have sophisiticated enough of a pallete to enjoy it's ultra subtle flavor. After all, you can fool all the people some of the time, or some of the people all of the time, but you cannot fool all the people all of the time. Except rich people.
