Sharing dishes

My girlfriend and i always split dishes at restaurants. We'll order soup, appetizer, entrees, just like normal, but we often switch dishes half-way through so we can try more of the menu. I don't think there's a better way to eat out.

Many restaurants charge extra for a split plate--- like $2. I never run into that problem because we order 2 orders anyway. Why is this such a widespread practice? I can think of some obvious reasons, but the practice comes off as un-friendly. Many restaurants have such large portions that you can easily be satisfied with one entree and a few extras. Why is this discouraged?
