So I have always been a big believer in the alchemy that is butter, sugar, flour and eggs when it comes to making dessert. Then recently, a friend was raving about these bon bons she made for her kids; they were filled with a chocolate chip cookie "dough" made with chickpeas as the base. I rolled my eyes (inwardly at least) as she went on about how good they were and how her kids could not tell they were made with beans.... I forgot about it until she posted about the recipe on facebook and then my curiosity finally got the better of me and I tried it. Wonder of wonders... my family went nuts for these bons bons and honestly, they really were "shockingly delicious..."
After my success with these treats, I found myself sucked into the world of vegan baking and treat-making....I recently made some amazing triple ginger-molasses cookies with spelt flour and a flax egg; a few weeks ago I would never have believed this combination of ingredients could produce something so satisfying. I also made some energy bites with dates, nuts, cacao nibs, honey and mint extract that went over pretty well in my house... and while I know these are not treats, I have been very into baked oatmeal cups as well.. I have found interesting recipes on various blogs, incl. oh she glows, chocolate covered katie, minimalist baker, and vegan richa... but was hoping some of you wonderful chowhounders out there could recommend some tried and true vegan treat recipes that are healthy but don't taste like it (I am open to anything, but would prefer recipes that don't require a ton of obscure and pricey ingredients; am not into gluten-free or low-fat or anything like that) Thanks in advance!
