I have been trying (and failing) to bake bread using all whole wheat flour. I do not want to add white flour if at all possible. My bread keeps coming out very dense. Not sure if it's the wheat flour or perhaps I just don't have the right recipe or perhaps don't know some 'secret' to making it rise into a normal looking and textured loaf like the (organic) whole wheat bread you get at the store. I do not have a bread maker, but have a convection oven if that would help while baking. I am using a normal sized loaf pan, so it should yield a little smaller sized loaf than store bought, but I would imagine even so it should still rise to come out more than 2" thick :-/.
Help! Any recipes and/or tips appreciated!
