Absolutely fell in love with Shan Tofu noodles when we were in Yangon and had it twice at Shan Yoe Yar (had to go back we loved it so much). The Shan tofu was made from a yellow bean (like lentils) and not soy and it made a paste over the noodles. I have asked many owners/chefs at the SF Burmese restaurants if they would ever put it on the menu or as a special order and have been told that it is too difficult - has to be eaten fresh. They would make it at home but not offer it in their restaurants. I have had the Shan tofu at Ruby Burma cut into squares and fried so they must make the Shan tofu, but won't make it into the noodle dish! Does anyone know where one could get this dish. Maybe if enough people ask for it someone will make it!!!!
